Ingredients:
Amount Ingredient
1 med onion chopped
2 med zucchini cut 1" cubes
2 can vegetable or chicken broth - (14 1/2 oz)
1 can crushed tomatoes - (28 oz) undrained
1 can Great Northern beans - (15 1/2 oz) drained, rinsed
2 tbl dried basil leaves
1/4 tsp salt
1/4 tsp freshly-ground black pepper
Instructions:
Instructions: Combine all ingredients except tortellini in crock pot. Mix well. Cover and cook on LOW setting for at least 6 hours.

When ready to serve, increase heat to HIGH setting. Add tortellini. Cook an additional 20 minutes or until tortellini are soft.

This recipe yields 8 servings.
