Recipe for Italian White Bean and Artichoke Salad

1/2 tbl	red wine vinegar
2 tbl	olive oil
1 tsp	tomato paste
1/4 tsp	salt
1/8 tsp	black pepper
1 x	garlic clove minced

6 cup	thinly sliced spinach about 5 cups
2 cup	green bell pepper strips
3/4 cup	diced sharp Provolone cheese (3-ounces)
1/2 cup	diagonally sliced celery
1/2 cup	vertically sliced red onion
2 tbl	chopped fresh basil
1 tbl	chopped fresh parsley
19 oz	canned cannellini beans or other white
	beans drained
14 oz	canned artichoke hearts drained and

Instructions:

Instructions: FOR THE VINAIGRETTE: Combine ingredients in a small bowl; stir with a whisk.

FOR THE SALAD: Combine spinach and remaining ingredients. Drizzle with vinaigrette, and toss gently. 4 servings.

NOTES : Try to handle this salad as gently as possible so the canned beans will hold their shape.
