Instructions: Spring lamb and spring vegetables - with a few spice twists. Fiddleheads are local delicacy, although it may be a little early to find them. Do call around as they are worth a little searching. If the fiddleheads are unavailable, try to find bundles of small leeks to use in the leek recipe.

A very well received menu all around.

The Vegetables Giardiniera are perhaps a little too acidic to match with a wine but were very tasty.

The Cheddar Walnut Toasts were quite rich, a balance for the vegetables.

Fiddleheads (young fern tips) are a springtime delicacy in New England and Eastern Canada. This is a great preparation if you like fiddleheads. Green asparagus could be substituted.

The spicing in the lamb is subtle, increase it if you wish.

I like asparagus and Chinese-style preparations seem work well with it. Great recipe!

The Poached Pear recipe could be extended to eight servings with the same amount of poaching liquid. Served with a very sweet Australian botrytus semillion sauternes.
