1 cup corn meal
1/2 tsp baking soda
1/2 tsp salt
1 cup cream-style corn
2/3 cup nonfat buttermilk
1 can chopped green chiles
2 x egg whites, slightly beaten
2 tbl oil
1/2 cup Low-fat Cheddar, shredded
Instructions:
Instructions: Combine first 3 ingredients, stirring well. Add next 5 ingredients, stirring just until moistened. Spray muffin cups with Pam and fill half-full with batter; sprinkle with cheese and cover with more batter.

Bake at 425 degrees for 30 minutes or until golden brown.

Yield: 12 muffins.
