Instructions: Slit jalapenos and scoop out seeds. Place one finger of cheese in each jalapeno. Beat egg yolks until fluffy and pale yellow. Beat egg whites separately until stiff and fold into yolks. Stir flour and corn meal together. Dip stuffed jalapenos first into egg mixture, then into flour and corn meal mixture. Fry immediately in one inch hot oil until crisp and golden brown. Drain and serve.
