1 x pork loin roast, 3-3 1/2 lbs.
4 x jalapenos, quartered
6 med clove garlic
1/2 tsp salt
1 tsp coarsely ground black pepper
1 cup water
1 cup fresh orange juice
Instructions:
Instructions: Preheat oven to 450 degrees.

Wash and pat dry the roast. Place the jalapenos, garlic, salt, and pepper in a food processor and chop until blended.

Make several slits in the roast and, using an iced tea spoon or your hands, insert the jalapeno garlic mixture into the slits.

Pour the water, orange juice, and 1 cup of the white wine into a baking pan. Set the roast in the liquid and place the pan in a 450-degree oven for 30 minutes. Reduce the heat to 350 degrees and cook, basting occasionally, for another 30 minutes or until the roast is done.

When done, remove the roast to a carving board and let sit for 10 minutes.

While the pork is resting, skim the fat off the remaining liquid in the baking pan, then place on top of the stove over high heat. Stir in the remaining cup of wine, deglaze the pan, and cook until the sauce reduces slightly

Slice the pork and serve with the sauce on the side.

SERVING SUGGESTIONS: Serve with oven-roasted potatoes and a fruit salad.
