Instructions: Melt the butter, mix in sugar and eggs.
Add coconut and flour, mix to form a firm dough. Roll into walnut sized balls and place on a lightly greased baking tray. Flatten slightly with a fork and make a small indentation in the center of each biscuit with your finger. Fill indentation with jam. Bake 350 F for 20 minutes. Email this Recipe:
