4 cup chicken broth
4 lrg carrots, scrubbed and cut into 1/2 inch slices
1 sm onion, chopped
2 tsp grated fresh ginger
1 x clove garlic, minced
2 tbl peanut butter
1 tsp Worcestershire sauce
1 tsp curry powder, optional
1/4 tsp nutmeg
Dash of Tabasco
Salt and pepper to taste
Instructions:
Instructions: Place broth, carrots, onion, ginger, garlic, peanut butter, Worcestershire sauce and curry powder in a large saucepan. Bring to boil. Lower heat. Cover and simmer about 20 minutes, or until carrots are very tender. Cool slightly.

Blend in batches in blender or food processor until very smooth. Add nutmeg, Tabasco, salt and pepper. Garnish with diced apple.
