3 lb oxtails trimmed
1 lrg onion halved from root to stem and sliced
1/4 cup soy sauce
1/4 cup whole wheat flour
1/2 tsp salt
1 tsp pepper
1/4 cup oil
1 x bell pepper chopped
1 x habanero chile chopped
1 lrg tomato chopped
2 x cloves garlic pressed
6 cup hot water
3 tbl molasses
Instructions:
Instructions: Marinate oxtails and onions in soy sauce for 1-2 hours.

Combine flour with salt and pepper in a ziplock bag.

Dredge oxtails in flour, reserving onions and soy sauce.

Heat oil in large pot or dutch oven.

Brown oxtails on all sides in batches and remove from pan.

Drain any oil in excess of 2 tbls from pan.

Add drained onions, bell pepper and habanero and sauta about two minutes.

Add garlic, after a few seconds add tomato and cook about two minutes more.

Add molasses, reserved soy sauce and water and stir.

Return oxtails to pan, bring to a boil, turn heat down to low and simmer uncovered 1 1/2 hours.

Add thyme sprig and simmer 30 minutes more.
