1/4 cup olive oil
2 med onions, halved, sliced
2 tsp minced ginger
4 x cloves garlic, minced
2 lb okra, sliced crosswise 1/2 inch thick
2 lrg ripe plantains, peeled and diced
2 lrg tomatoes, peeled and diced
1 cup chicken or vegetable broth
1/2 cup chopped parsley
1 tbl whole allspice
1 lrg eggplant, peeled, diced
2 tsp salt
Instructions:
Instructions: Heat oil in large, heavy-bottomed skillet over medium-high heat. Add onions and ginger; cook until onions are lightly golden, about 5 minutes. Add garlic; cook 1 minute.

Stir in okra, plantains, tomatoes, broth, parsley and allspice; cook, stirring occasionally, until plantains are partly cooked, about 10 minutes. Stir in eggplant; cook until vegetables are soft and liquid is reduced, about 20 minutes. Add salt and pepper to taste.
