1 lb Shady Brook(r) hot Italian turkey sausage sliced
1 tsp oil
2 lrg onions chopped
2 x cloves garlic minced
2 lrg green bell pepper chopped
1 lrg red bell pepper chopped
1 lrg yellow bell pepper chopped
1 cup chopped celery
1 cup dry white wine
1 x 10 ounce bag sliced okra
40 oz stewed red ripe tomatoes in juice, not puree.
Reserve juice (*see note).
1/2 cup pearl barley
1/2 cup brown rice
2 cup tomato juice (from reserved juice)
1/4 cup liquid broth or water
1 dsh Worcestershire sauce
1 tsp dried rosemary crushed
1/2 tsp allspice
1/2 tsp cloves
Instructions:
Instructions: Slice sausage and precook in the microwave. Rinse under hot water and set aside.

*Strain the tomatoes, reserving juice. Make the difference with water or broth to roughly 3 1/4 cups. More liquid is fine, but dont go less. Set aside.

In a large nonstick skillet, heat the oil until hot but not smoking over medium heat.

Add the garlic and onion and cook, stirring occasionally, until the onion has softened, about 5 minutes.

Stir in the bell pepper, 1/4 cup of the white wine, celery, and sausage and cook on high, stirring occasionally, until the pepper has softened and wine has evaporated, about 5 minutes.

Add the barley, rice, and remainder of the wine, stirring to coat; cook until the wine has evaporated, about 5 minutes. Stir in the tomato juice/liquid mixture, Worcestershire(r) sauce, tomatoes, and okra.

Bring to a boil over medium high heat, reduce to a simmer, cover and cook for 30 minutes.

Add spices, cover and simmer 15 more minutes, or until the grain is tender. Let sit before serving at least 10 minutes.

NOTES :
Well, in our enthusiasm with our new fridge, my husband turned in down nice and cold! MMm the juice and drinks were refreshing! Unfortunately, all my new veggies didnt fare so well - they froze. So... I made a HUGE pot of veggie soup, and dug out a great Jambalaya recipe. None of these amounts are exact. You can up or down what you like; Jambalaya is one of those dishes that takes whatever you have in the fridge. :) Zucchini, yellow squash, carrots, weird stuff. It might not be kosher, so to speak, but its always good.
