1 x Onion, finely chopped
1/2 cup Finely chopped scallion, (green onion)
2 tsp Fresh thyme leaves
1 tsp Salt
2 tsp Sugar
1 tsp Ground allspice
1/2 tsp Ground nutmeg
1/2 tsp Ground cinnamon
1 x Hot pepper, finely chopped, (scotch bonnet/habanero for authenticity)
1 tsp Ground black pepper
3 tbl Soy sauce
1 tbl Oil
Instructions:

Combine ingredients, and processin blender or food processor. Marinate chicken in refrigerator for at least four hours before cooking.
