1/2 cup flour
1/2 cup yellow cornmeal
3 tsp baking powder
1/4 cup sugar
1 x egg
1 tbl oil
Instructions:
Instructions: Measure the dry ingredients together. Beat egg, oil and milk together. Add dry ingredients to liquid mixture. Pour into heavy iron skillet (9"), which has been heated with approximately 1 tablespoon of oil. Bake at 425 degrees for about 20 minutes. This method makes a very crispy bottom crust. May also be baked in a well-greased muffin tin, cake pan, cornstick pan, etc. Easy to double the amount.
