1/2 cup soft unsalted butter
1 cup granulated sugar
2 lrg eggs
Zest and juice of 1 orange about 1/2 cup juice
4 x bananas very ripe mashed but still chunky
2 cup all-purpose flour
1 tsp baking soda
1/2 tsp salt
1/2 tsp nutmeg
1/4 tsp ground ginger
1 tsp banana extract
Instructions:
Instructions: Preheat oven to 350:. Grease and flour a loaf pan. In a large mixing bowl, using an electric mixer, cream butter and sugar, add and beat until fluffy. Add orange zest, juice and bananas and mix until well combined. Add the banana extract. Add the remaining dry ingredients and stir by hand just until moistened. Pour into prepared pan, bake about 1 hour or until a pick inserted into the center of the bread comes out clean. Remove from oven and cool on a rack for 10 minutes. Remove from the pan and cool completely. I sprinkle chopped nuts into the bottom of the prepared pan to help prevent sticking and it adds a few extra nuts. Jan
