Ingredients:

1/2 head cauliflower, cut in florets
3 lrg carrots, cut in 2" strips
3 x ribs celery, 1" pieces
1 can baby corn
1 x green bell pepper, cut in strips
1 can button mushrooms, drain (8 oz.)
3/4 cup white wine vinegar
1/2 cup olive oil
2 tbl sugar
1 tsp salt
1/2 tsp oregano
1/4 tsp pepper
1 can pimento drained, (4 oz.)
1 can pitted black olives, drain (#303 can)
1 jar green pimento olives, drain
1 can artichoke hearts, cut in quarters
1/4 cup water
Instructions:
Instructions: Mix ingredients (except Italian dressing) together in Dutch oven: cover.

Bring to a boil. Reduce heat; simmer for 5 minutes. Cool quickly. Add the low-calorie Italian dressing. Refrigerate (covered) 24 hours before serving. Keeps for 4-6 weeks in refrigerator (covered).
