1/4 lb fresh mushrooms or 1 can (4 oz.) - I use fresh!
2 can (10 1/2 oz.) condensed chicken broth -low or reduced sodium
2 x broth cans - water
1/2 cup finely chopped onion
1/8 tsp ground cinnamon
1/8 tsp ground nutmeg
1/8 tsp salt
63/1000 tsp pepper
1 tsp cornstarch - see notes
Instructions:
Instructions: Rinse, pat dry and finely chop fresh mushrooms. In medium saucepan, combine mushrooms (use liquid if using canned) with chicken broth, water, onions, cinnamon, nutmeg, salt and pepper. Bring to a boil; reduce heat and simmer for 15 minutes. Combine cornstarch with cold water; slowly stir into hot soup. Cook until slightly thickened and clear. Serve with toasted onion flakes sprinkled over the top.
