For Jerk Chicken: ----------------
4 cup green onion - sliced
1/4 cup fresh thyme leaves
3 tbl ginger - peeled and grated
2 tbl fresh lime juice
2 tbl vegetable oil
1 tbl black pepper
1 tbl ground coriander
2 tsp salt
2 tsp allspice
1 tsp nutmeg
1 tsp cinnamon
5 clv garlic - halved
3 x bay leaves
1 x Scotch Bonnet Pepper - seeded
1/2 lb chicken breast halves without skin
----------------- For Spicy Bananas: ----------------
2 med bananas - peeled and quartered
1 tbl butter
1/2 tsp curry powder
1/8 tsp ground ginger
Instructions:
Instructions: Preparation Time: 30 min.

Marinating Time: 2 hrs.

This is a delicious, spicy way to serve chicken. You can also make a tropical salsa with avocado, mango and jalapeno to go along with it.

For Spicy Bananas:
In a large nonstick skillet, melt butter over medium high heat. Add curry, ginger, and chili powder. Cook for 30 seconds, stirring constantly. Add bananas. Cook 1 minute per side.

For the Rub:
In a food processor fitted with knife blade, process all the ingredients except chicken until a thick paste is formed.

For the Chicken
Place chicken breasts in a shallow dish. Spread jerk rub all over both sides of chicken, reserving about a 1/4 cup.

Cover and marinate chicken in refrigerator for 2-4 hours.

To Grill:
Prepare outdoor barbecue. Place chicken breasts on grill. Cook 10 minutes on each side (or until tender & no longer pink in the middle), basting occasionally with leftover jerk rub.

Serve with spicy bananas and coconut black beans.
