Instructions: Place pork in a large self-sealing plastic bag. In a large glass measuring cup or bowl, combine oil, lime juice and vinegar. Add thyme, brown sugar, allspice, nutmeg, pepper, salt, cinnamon, cayenne, cloves, onions, chilies and garlic. Mix until blended. Pour over pork. Seal bag and marinate in refrigerator 8 to 12 hours or overnight.
Preheat oven to 350 degrees. Drain pork, discarding marinade. Place meat in single layer, not touching, in a shallow baking pan. Roast 25 to 30 minutes, until pork is tender. Remove to serving platter. Serve pork pieces hot as an appetizer. Note: Wear gloves when handling fresh chilies; the oils can cause a burning sensation on your skin. Email this Recipe:
