2 med tomatoes cut into wedges
2 cup yellow pear tomatoes halved
1 cup cherry tomatoes halved
1 cup red currant tomatoes
1/2 tbl extra virgin olive oil
1 tsp balsamic vinegar
1/4 tsp salt
2 bn arugula (1/4 lb. ea.) coarsely chopped
1 tsp fresh lemon juice
1 tbl chopped fresh mint
1 tbl chopped fresh chives
Instructions:
Instructions: Combine all tomatoes, 1 1/2 tbsp oil, vinegar and 1/8 tsp salt in a large bowl. Let stand at room temperature for 1 hour.

Toss the arugula with the remaining 1 tbsp oil, lemon juice and remaining 1/8 tsp salt in a medium bowl. Arrange the arugula in a ring on a large platter. Spoon the tomato mixture in the center. Sprinkle the tomatoes with the herbs and pepper. Serve immediately.
