Instructions: Combine all tomatoes, 1 1/2 tbsp oil, vinegar and 1/8 tsp salt in a large bowl. Let stand at room temperature for 1 hour.
Toss the arugula with the remaining 1 tbsp oil, lemon juice and remaining 1/8 tsp salt in a medium bowl. Arrange the arugula in a ring on a large platter. Spoon the tomato mixture in the center.
