600 gm Jerusalem artichokes
6 x garlic cloves
50 gm butter
Instructions:
Instructions: Thoroughly wash artichokes.

Heat butter in a roasting tray, toss in artichokes and saute until they begin to take some colour. Add whole garlic cloves and toss well to combine.

Season and roast in a hot oven 380F/200C for 30 minutes or until tender.

Serve as a vegetable with roasted and grilled meats.
