Instructions: In a medium bowl, pour boiling water over couscous, stir, cover and let sit about 15 minutes, or until water is absorbed.
Uncover couscous, add 1 T. oil, fluff with a fork and set aside to cool completely. In a large bowl, combine couscous with all of the remaining ingredients, tossing well. Serve chilled or at room temperature. Makes 8 servings. Email this Recipe:
