1/2 cup mayonnaise
3 tbl sour cream
1 tbl fresh lemon juice
1 tsp grated lemon rind
1/2 pkt sugar substitute
1 med jicama - (abt 6 oz) peeled, and
cut into matchstick sized pieces
10 oz smoked turkey breast in one piece cut into cubes
3 x celery stalks thinly sliced
8 x Romaine lettuce leaves
Instructions:
Instructions: In a large bowl, mix mayonnaise, sour cream, lemon juice, lemon rind, and sugar substitute until smooth.

Mix in jicama, turkey cubes, and celery. Toss gently to coat with dressing. Arrange lettuce leaves on 4 plates. Divide salad over lettuce; sprinkle with walnuts.

This recipe yields 4 servings.

Description: "This is our version of a Waldorf salad, substituting lower-carb jicama for the traditional apple. The addition of smoked turkey makes this a main dish."
