Instructions: Combine flour, salt, and pepper. Pound cutlets flat; dredge in flour mixture. Heat oil and 1 T. butter in a large frying pan over medium-high heat. When hot, add turkey: cook until golden (about 2 minutes per side).
Remove from pan and cover to keep warm. Add Madeira and stock; bring to boil (stirring to scrape up any browned bits) and continue to boil until mixture is reduced to 1/2 cup (3-4 minutes). Add salt and pepper, if needed. Cut remaining 1 tablespoon butter into small pieces. Remove pan from heat, add butter, and stir until sauce is smooth. Pour over turkey and serve immediately.
