1 cup Cheese,american -- grated
1 tsp Salt
3 x Eggs -- separated
Instructions:
Instructions: Separate eggs, and beat the yolks until they are lemon in color. and Beat the whites of the eggs until they are stiff. Cook milk, tapioca and salt for 5 minutes in a double boiler then add grated cheese, and egg yolks, mixing a little of warm milk with yolks first, before adding them all.

Lastly, last add the beaten whites. Place in a pan of warm water and place in oven to cook. No time or temp. was given so with a modern souffle it is 350 degrees for 45-50 minutes.
