1 lrg Granny Smith apple
1 med lemon
1 cup orange juice
12 oz fresh cranberries
1/2 cup sugar
1/4 tsp salt
1/4 tsp cayenne (or to taste)
Instructions:
Instructions: Halve & core apples (peeled if you prefer); dice into small pieces, making about 1 1/2 cups. Pare 10 thin strips of peel from lemon with zester, trim off ends and cut lemon lengthwise into quarters. Cut each quarter into 1/4" trianges. Combine juice, berries, apple and lemon pieces, strips of lemon peel, vinegar and seasonings and stir together. Cover and bring to a boil over high heat. Stir, reduce to medium and simmer for about 5 min., till all berries burst. Uncover, reduce heat, simmer another 4-5 minutes, till chutney is thick. Taste and add small amounts more vinegar, salt or cayenne, as you prefer. Will keep several weeks refrigerated or longer frozen.
