1 tbl cornstarch
1 tsp turmeric
1 cup cider vinegar
2 x green bell peppers seeded, diced
2 x red bell peppers seeded, diced
1 lrg cucumber peeled, diced
3 cup fresh corn kernels
4 x celery stalks diced
1/4 cup sugar
1 tsp mustard seeds
Instructions:
Instructions: In a large pot, blend cornstarch and turmeric with 1 tablespoon of the vinegar. Add the rest of the vinegar, and mix in remaining ingredients. Bring to a boil, then lower heat, simmering slowly for one hour.

Pour into hot sterilized jars and seal with hot sterilized lids and rings - following manufacturers directions - and seal.

This recipe yields 6 cups.

Yield: 6 half-pints
