Ingredients:
Amount Ingredient
10 lrg mangoes
2 x cloves of garlic
1 x onion
1 cup seedless raisins
1 cup cider vinegar
1 cup freshly squeezed lime juice
1/2 cup brown sugar (tightly packed)
1/2 tsp crushed dried chili peppers
1 tbl celery seeds
1 tbl whole mustard seeds
2 tbl grated fresh ginger root
Instructions:
Instructions: Wash, pare, seed and cut mangoes into small pieces and put them into a crock or bowl. Peel and chop the garlic and onion and add to crock with all remaining ingredients. Cover and let mixture stand overnight. The next morning, put this mixture into a preserving kettle and cook slowly, uncovered, for about 3 hours, or until thick.

Ladle into hot sterilized jars and seal immediately.
