Ingredients:

1/2 oz Black eyed beans, cooked
6 x Kaffir lime leaves
1 x 1 in piece lemon grass
1/2 oz Aduki beans, cooked
1 x 1 in piece root ginger, chopped
1 x Red chilies, (1 to 2)
Instructions:
Instructions: 1. In a food processor combine all the ingredients and blend until a rich paste has developed.

2. Form small medallions from the paste.

3. Heat the oil in a large frying pan and shallow fry the croquettes for 3-4 minutes.

NOTES : I bought these delicious croquetres while shopping down one of the busy streets in Chiang Mai. I have adapted the recipe to create a more interesting balance of flavours.
