Instructions: Kangaroo is a true "wild" game meat.It has a mild game favour and is extremely lean.In fact the fat level in kangaroo meat is between 1.0 and 1.5%,added to this is the fact that it has a low kilojoule level making it an excellent source of zinc and iron not to mention protein.If you are Australian there are other reasons for choosing kangaroo meat. The environmental damage caused by livestock to our grazing lands is enormous (There were no hard hoofed animals in Australia prior to two hundred years ago) Kangaroos have soft feet,and so do not destabilize river banks etc. and the also do not eat the grass down to the roots allowing them to grow new shoots with the coming of rain.Below are some recipes for kangaroo I have used if you cannot get Kangaroo you may like to replace it with venison or even beef.Because of the low fat content kangaroo meat will be extremely dry if overcooked-so serve medium rare at most.
