800 gm Kangaroo Fillets
200 gm Butter (soft)
12 x Chives (chopped)
100 gm Blueberries (tinned or fresh)
Instructions:
Instructions: Slice Kangaroo Fillets to approximately 100 g portions and gently tap with meat mallet to slightly flatten out, refrigerate. Mix into soft butter - blueberries, chives, salt, pepper. Place butter into grease-proof paper and roll to fim and refrigerate.

Heat pan with oil, seal off kangaroo Fillets on both sides with salt and pepper and place in warm oven for 10 minutes and allow to cook through. Meanwhile cut butter into rounds - keep in a cool place.

Take out fillets and put onto plate. Place butter on top of each fillet and allow to melt slightly - then serve.
