200 gm Kangaroo Loin
Assorted Greens 1 x
3/4 x cooked large Potato
10 gm Ground Pepperleaf
50 gm Thin Noodles
100 gm Fresh Cream
White Wine
30 ml Game Jus
Instructions:
Instructions: 1. Grate potato finely, mix with blanched noodles and seasoning

2. Compress to large round patty shape and cook in a little oil in non-stick pan until outside is crisp on both sides

3. Cut to size required

4. Reduce cream and white wine till sauce consistency, add ground pepper to taste

5. Season loin and sear in hot pan finish in oven if desired till medium rare

6. Rest for 3-5 minutes

7. Saute off assorted greens, till just wilted

8. Serve by slicing loin onto rousti and greens

9. Sauce with jus and cream as duo

10. Garnish with sweet potato crisps if desired
