500 gm diced kangaroo
2 tbl light oil
1 x onion, chopped
1 clv garlic, crushed
125 gm mushroom, sliced
1/2 cup red wine
1/4 cup beef stock
2 tsp tomato paste
1 tsp chopped thyme or rosemary
1 x bay leaf
Instructions:
Instructions: Heat 1 tablespoon oil in a pan. Brown meat then transfer to an overproof dish. Add extra oil to pan and cook oinion and garlic until soft but not brown. Stir in remaining ingredients and pour over meat. Bake at 160 degrees Celsius for about 2 hours.

Serve with creamy mashed potato or buttered fettuccine.
