Instructions: Preheat oven to 450 F.
In a medium size cooking pot, add potatoes, cover with water and boil until cooked. When done, drain water and discard; mash potatoes and set aside. In a separate mixing bowl, using a whisk, beat eggs, add whipping cream and mix again to blend. Add salt, baking powder and beat again. Now add mashed potatoes to egg mixture and mix well to blend. Add grated cheddar and Swiss cheese and mix. Prepare a 8" x 8" (or slightly larger) oven proof baking dish by spraying with a vegetable oil. Pour potato/egg mixture into prepared dish, spread and level. Bake in preheated 450 F oven for 30 to 35 minutes or until top has a nice light brown color. Remove from oven and let cool for about 5 minutes before serving. Cut Kartoshnik into 2" x 2" squares and serve with melted butter, a dollop of sour cream or yogurt and sprinkled with chopped green onions or chives. This Kartoshnik when baked, looks like a cake, but is eaten like a potato. Use as a substitute to other types of potatoes that you may enjoy. Email this Recipe:
