1 kg beef, cut into cubes
1 x beef soup bone
500 gm lamb, cut into cubes
1 kg chicken fillets, cut into pieces
2 lt water or chicken stock
kosher salt, fresh coarsely-ground black pepper and dried red pepper flakes, all to taste
2 cup diced potatoes or turnips
3 cup chopped onions
2 cup cooked lima beans or green peas
4 x carrots, diced
2 x capsicums, diced
3 cup corn kernels, (fresh, if possible)
2 cup okra, diced
6 cup canned tomatoes, with the juice
4 x cloves fresh garlic, up to 6
Instructions:
Instructions: Remove the skins from the chicken then put all the meats into a large soup pot with the bone and the water. Season to taste with salt, pepper and hot pepper flakes. Cover tightly and bring to a boil. Reduce heat to a simmer and simmer covered for 2 to 4 hours, skimming off any foam as it rises to the surface.

Remove all bones from the pot. Add all the vegetables, except the okra, and simmer for 2 to 4 hours more. Add the okra & garlic and simmer for 2 to 4 hours more. Taste and re-season to taste. Simmer at least another hour.

Serve hot, with fresh rolls or corn bread. Tastes best if cooked one day, refrigerated overnight, and heated through the next day before serving. Will keep, refrigerated, up to 2 weeks.
