Instructions: Herbst (Barrons Educational Series, 1995), Key limes, grown in Florida, are one of two main lime varieties (the other being the Persian lime, the most widely available in the United States). The Key lime is smaller, rounder and has a color thats more yellow than green.

Outside of Florida, the Key lime is usually found only in specialty produce markets and supermarkets that carry gourmet produce. You may substitute Persian limes for Key limes, but your product will not have the distinctive tartness that the Key lime would give you.
