Instructions: Preheat oven to 350 degrees. Spray 2 nonstick cookie sheets with vegetable oil and set aside.
Sift dry ingredients together and set aside. Beat egg whites until frothy. Beat in the juice. Gradually add dry mixture, stirring until well blended. Fold in fruit cocktail. Using a 1/8-cup (2-tablespoon) measure, scoop dollops of pancake batter onto sprayed pans, leaving at least 2 inches between pancakes. Bake 10 to 15 minutes or until puffed and golden. Serve with maple syrup, fresh strawberries, peaches, or other fruit. NOTES : This is the title recipe from Diane Mott Davidsons latest culinary murder mystery, Killer Pancake (Bantam). The ingredients are far from lethal, however. Instead, "killer" is intended as praise for the cakes "awesome" taste, according to one of the books characters. Email this Recipe:
