Amount Ingredient
1/2 med Onion, minced
4 x Cloves garlic, minced
1 tbl Bacon fat
8 x Chipotles en adobo, minced
2 tbl Good chile powder, heaping
2 tsp Cumin
2 tsp Thyme
1/2 cup Cider vinegar
2 tbl Prepared mustard
1 tbl Worcestershire
1 tbl Nuoc mam
1/4 cup Bourbon
1/2 tbl Cocoa
Instructions:
Instructions: Saute onions and garlic on med high heat until soft. Add everything else.

Simmer uncovered until thick.
