Instructions: Pierce squash with fork in several places. Microwave on High (100%) 5 minutes. Remove from microwave and cut squash in half lengthwise; remove seeds.
Puree 2 kiwifruit; stir in margarine, brown sugar, and ginger. Place each half of squash cut-side-up in microwave-safe baking dish. Pour half of kiwifruit mixture into each half of squash. Cover with lid or vented plastic wrap. Microwave on High 8-10 minutes or until squash is tender; rotate dish a quarter-turn half-way through cooking. Quarter and slice remaining kiwifruit; arrange on squash. Sprinkle with nuts. Email this Recipe:
