1 cup yellow split moong beans
2 x white onions
2 x cucumbers
1 sm tomato
1 x jalapeno chili (optional)
1 tbl lime juice
1 tsp sugar
Salt to taste
1 tbl chopped cilantro
Instructions:
Instructions: Soak the moong beans in room-temperature water to cover for 4 hours. Drain the beans in a colander. Set aside for 15 minutes. Chop the onions, cucumbers and tomato into 1/4 inch cubes and combine them in a bowl. Mince jalapeno and add to vegetables along with lime juice, sugar, salt, cilantro and coconut. Add the drained moong beans and mix well. Serve immediately at room temperature.

Refrigerate leftovers.
