Ingredients:
Amount Ingredient
2/3 cup butter or margarine, softened
1/2 cup sugar
3 x eggs
1 tsp vanilla
1/2 cup unsweetened cocoa
1/4 cup flour
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1 cup water
2/3 cup rinsed, drained and chopped sauerkraut
----------------- Mocha frosting: ----------------
1/2 cup whipping cream, whipped
----------------- Whip in the following: ----------------
3 tbl sugar
1 tbl instant coffee
2 tsp cocoa
Instructions:
Instructions: Cream butter with sugar well. Beat eggs and vanilla. Sift together dry ingredients. Add alternately with water to egg mixture. Stir in kraut.

Bake in two greased and floured 8" cake pans (or one 9 x 13) at 350 degrees
for 30 minutes or until cake tests done. Frost with mocha frosting.

Mocha frosting:
1 1/2 c whipping cream, whipped
Whip in the following:
3 tablespoons sugar
1 tablespoon instant coffee
2 teaspoons cocoa
2 tablespoons rum (optional)

Spread on cooled cake
You can use one small carton (1 cup) of whipping cream, whipped and then substitute 2 cups of Cool Whip folded in after the flavorings have been added.
