Instructions: Grate zest from lemon.
Whisk egg, yolk and sugar over low heat until warm. Place in mixer and whisk on high until thick and creamy. Carefully fold in flour and zest. Line a baking tray with baking paper and pipe into finger shapes 10cm X 1cm. Sprinkle heavily with pure icing sugar and bake 190C/360F for about 10 minutes or until golden. Serve with afternoon tea.
