3 oz blue cheese, such as Point Reyes Farmstead Blue, at room temp
1/2 lb ground lamb
1/2 tbl finely chopped fresh flat-leaf (Italian) parsley
1 tsp finely chopped fresh rosemary
Instructions:
Instructions: Divide cheese evenly into 4 pieces and shape each into a 2 inch disk. Set aside. In a medium bowl, lightly combine lamb, parsley, rosemary, and salt and pepper to taste. Do not over-mix. Divide lamb into 4 portions. Molding around a piece of cheese, shape each into a rough ball, then flatten slightly into a round patty, making sure cheese is completely encased within. Place patties on a tray lined with plastic wrap and refrigerate, covered until needed. Grill burgers, turning once, until cheese is melted and meat is medium, 4 to 5 minutes on each side. (USDA recommends cooking ground lamb to 160 degrees F.)
