Instructions: Peel and slice onions.
Season lamb. Heat butter in a heavy frypan and saute lamb pieces over high heat to lightly brown on all sides. Cook in 2 or 3 batches. Transfer meat to a casserole dish. Reduce heat, add a little more butter to pan and cook onions, garlic and ginger gently 3 minutes to soften. Add stock, yoghurt, chutney and spices, bring to the boil and pour over the lamb. Cover and cook for about 1 1/2 hours in oven at 180C/350F until lamb is tender. Sprinkle with chopped coriander. Email this Recipe:
