8 x lamb kidneys
1 x onions, medium
60 gm mushrooms
60 ml Madeira
3 slc bread, white
50 ml vegetable oil
parsley, chopped
150 ml gravy mix
60 ml cream
Instructions:
Instructions: Cut kidneys into slices of about 2 cm. Quickly fry in the oil for about 3 minutes. Remove kidneys and set aside.

Add onion to the same oil and lightly fry, then pour off excess oil. Add mushrooms and green peppercorns to the onions, add the Madeira and simmer for a few minutes to allow it to reduce.

Add demi-glace and simmer gently for 5 minutes.

Correct the seasoning, stir in the cream.

Serve garnished with chopped parsley, sauteed mushrooms and fried bread croutons.

Brandy may be used in place of madiera.
