Ingredients:

2 tbl honey
2 tbl olive oil
4 x - 6 lamb steaks, each weighing about 150 g (6 oz)
salt
freshly ground black pepper
for the sauce:
2 cup fresh apricots, kernels removed or 3/4 cup dried apricots
1 x - 2 tablespoons honey (to taste)
2 tbl chopped fresh mint (or 1 tablespoon dried)
a few drops of lemon juice
1/2 tsp grated lemon zest
salt
freshly ground black pepper
Instructions:
Instructions: Heat the grill to maximum. Mix the honey with the oil and brush over the steaks. Season with salt and pepper. Grill at a high heat for 4 - 5 minutes each side. This will result in medium rare lamb steaks; if you like your lamb well done, grill for a few minutes more.

Put all the sauce ingredients into a food processor and process into a smooth puree. Decorate each steak with a sprig of mint and serve on a pool of sauce.
