Amount Ingredient
2 cup dried cannetlini beans soaked in cold water overnight
cherry tomato and rosemary dressing:
6 x cherry tomatoes halved and seeded
2 clv garlic
1/2 tsp fresh minced rosemary or 1/2teaspoon dried rosemary
1/2 tsp sugar
3 tbl sherry vinegar
1/2 cup olive oil
1/2 tsp ground pepper
1/2 tsp salt
1 lb cooked lamb cut into strips
6 cup rocket torn into bite sized pieces
Instructions:
Instructions: Drain and cook beans in simmering water until tender about 45 minutes. Drain and let cool.

In a blender or food processor process all dressing ingredients until well blended.

In a large bowl combine lamb beans and rocket.

Toss with dressing and garnish with sprigs of rosemary.
