Preheat oven to 350F, 180C
2 tbl vegetable oil
4 oz bacon chopped
2 lb lean lamb, cut into 1 inch cubes
2 x onions, chopped
3 cup good quality beef stock
two while your preparing this casserole
2 tbl tomato paste
1 tbl Worcestershire sauce
1 tbl fruit chutney
1/4 cup flour blended with 1/2 cup water
Instructions:
Instructions: Heat oil in a frying pan over medium heat and add bacon, lamb and onions. Cook stirring for approximately 5 minutes or until lamb is brown. Transfer mixture to casserole dish. Stir in stock, wine, tomato paste, Worcestershire sauce, chutney, flour mixture and half the parsley. Cover and place in oven for 2 hours or until lamb is tender. Stir occasionally. Season to taste. Sprinkle with remaining parsley.
