Instructions: Remove lemon rind in thin strips and dice. Set aside.
In a small saucepan, warm sherry and sugar until sugar has dissolved. Add diced lemon zest and juice Whip the cream gradually pouring in sherry mixture until all has been absorbed. Spoon into sherbet or wine glasses and chill. Syllabub may also be used to dress berries - wonderful with blackberries.
