1 kg Dried mixed fruit
225 gm Glace cherries
300 ml Stout
150 ml Whisky
150 ml Orange juice
1 x Orange, zest of
3 tbl Black treacle
250 gm Unsalted butter, slightly softened
250 gm Soft brown sugar
5 x Eggs, lightly beaten
350 gm Plain flour
1/2 tsp Baking powder
2 tsp Allspice
100 gm Brazil nuts, halved
Instructions:
Instructions: 1 Line the cake tin. In a large pan, place the dried fruit, cherries, stout, whisky, orange juice, zest and treacle, and bring to the boil.

2 Simmer gently for 10 minutes. In a large bowl, combine the remaining ingredients and beat together until smooth. Fold in the boiled fruit.

3 Spoon the mixture into the prepared cake tin and level the top. Bake for 3 1/2-4 hours. Cool in the tin, remove and decorate.

NOTES : Makes a 9" round or a 8" square cake
