3 cup shredded romaine
2 cup cherry tomatoes halved or 1 pint grape tomatoes
1 cup canned chickpeas drained and rinsed
2 cup thin sliced zucchini
12 oz marinated artichoke hearts quartered, undrained
3 oz pepperoni julienned
1 sm purple onion thinly sliced & separated into rings
Instructions:
Instructions: Layer lettuce, tomatoes, chickpeas and zucchini in a nonreactive 3-quart serving bowl. Drain artichoke hearts, reserving marinade; drizzle marinade over vegetables already layered in dish. Layer artichoke hearts, pepperoni and onions over zucchini. Cover; hill. Serve with dressing.
